A tasty chicken dish that is quick to make.
Chop the green pepper, onion and mushrooms into small pieces.
Melt the butter in a pan over medium heat and saute the chopped veggies until soft. Remove the pan from the stove top and stir in the flour. Gradually add the chicken stock and stir. Next add the milk and stir.
Return the pan to the stove top and allow the mixture to boil, stirring all the time. Once it boils, reduce the heat and add the salt and pepper and seasonings to the sauce and stir. Add the pre-cooked chicken pieces and mix into the sauce. Allow the chicken to heat through – about 10 minutes.
In a bowl, beat the egg yolks. Stir some of the hot sauce into the egg mixture to heat it and then stir the egg/cream mixture back into the pot of sauce and allow it to heat through. Do not let it boil.
Serve with cooked rice and a fresh salad.
