Yummy Cashew Chicken, SW MO style.
1. Cut the chicken breasts into bite-sized pieces.
2. Mix the egg and milk together. Dip the chicken pieces then pass them through the flour.
3. Bring your oil up to temperature and fry your chicken pieces.
4. In the meantime, bring half of the water up to a boil. Place the rice in, place a lid on and let the rice cook according to package directions.
To make the sauce:
1. Add the remaining water to a pan, over medium to medium high heat. Add the chicken bouillon cubes and let them dissolve.
2. Next add the corn starch and mix with your whisk.
3. Then add the soy sauce.
4. Now add the butter. Keep whisking until it thickens. It should have the consistency of gravy.
To assemble, place rice on your plate. Top with the chicken then the sauce. Then dress it with additional soy sauce, cashews and scallions.
