If a restaurant has it, I am always tempted to get a Cajun fettuccine Alfredo. I figured since I love the dish so much I would try my hand at making my own at home. Hope you like spicy, because this dish definitely packs some heat!
1. Heat the milk in a medium saucepan over medium heat. Break the cream cheese into chunks and add it into the hot milk to melt. Whisk until smooth.
2. Add pepper jack, a little at a time, whisking until melted and smooth.
3. Add the blackening seasoning and whisk until incorporated. Season with salt to taste.
4. Bring a pot of salted water to a boil, once to a boil add in fettuccine and cook to package direction.
5. Melt butter in a Dutch oven over medium heat. Then add chicken and brown it for about 5 minutes, stirring to cook all sides. Add in the red pepper, green pepper and jalapeno. Saute until softened, about 5 min. Add in the minced garlic and saute until fragrant.
6. Drain fettuccine and add it into the Dutch oven with the sauteed chicken and vegetables. Pour the Cajun Alfredo sauce over top and toss to fully mix all the ingredients. Serve and top with grated Parmesan.
