A recipe from a great cook and friend, Nancy.
Brown ground beef, onion, salt, and pepper. Add remaining ingredients except tortillas and cheese, and simmer 20 minutes.
Place about 1/2 cup hamburger mixture down the center of each tortilla. Top each with a small handful cheese. Fold one side over, then the 2 ends, and the last side. Wrap individually in foil. Freeze in resealable storage bags up to 6 months.
For immediate use, bake 15 minutes at 350ºF. Baking time from frozen is 30 minutes at 350ºF.
