Description

Sometimes a girl just wants a burrito bowl, but I don’t always want Chipotle. It’s expensive, all their ingredients are high fat and they don’t always have what I want! So, this is how I make burrito bowls.

Ingredients

  • 2 whole Sweet Potatoes, Peeled And Cubed
  • 1 whole Medium Onion, Chopped
  • 5 ounces, weight Frozen Corn
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 package Taco Seasoning, 1 Ounce Packet (or Whatever Spices Float Your Boat)
  • 1 Tablespoon Olive Oil
  • Optional Toppings (as Desired): Salsa, Sour Cream, Shredded Cheese, Lettuce, Etc

Preparation

Preheat your oven to 375 degrees F.

Combine all your ingredients (except the toppings) in a baking dish, stirring to combine.

Bake at 375 degrees F until the sweet potatoes are soft. Mine take 50-60 minutes generally, but the time will depend on how much you make and the size of your roasting pan.

Once it’s done, spoon it into bowls and add your toppings!

Optional toppings:
Avocado
Salsa
Light Sour Cream
Shredded Colby Jack
Lettuce
and Tomatoes

But the toppings are all about you!

This filling is super versatile. You can put it in anything from tacos, to enchiladas to breakfast burritos.

this looks yummy. I am gonna make this, but I have my own recipe for beans that I will substitute for the canned ones. FYI the recpie for the beans will be up on here soon ;)
