Description

A delicious take on bourbon chicken!

Ingredients

  • 3 cloves Garlic, Grated
  • 1 teaspoon Fresh Ginger, Grated
  • ½ teaspoons Red Pepper Flakes
  • ⅓ cups Dark Brown Sugar
  • 2 Tablespoons Ketchup
  • ½ cups Low Sodium Chicken Broth
  • ½ cups Apple Juice
  • ⅓ cups Low-Sodium Tamari (or Low-Sodium Soy Sauce)
  • 1 Tablespoon Apple Cider Vinegar
  • 2 Tablespoons Olive Oil, Divided
  • 2 pounds Chicken Breasts, Halved Horizontally
  • 1 Tablespoon Light Olive Oil
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Cold Water
  • 6 cups Cooked Rice
  • 3 cups Cooked Broccoli Florets ( I Like To Roast Mine)
  • 3 whole Green Onions, Sliced, For Garnish

Preparation

In a medium bowl, combine the garlic, ginger, red pepper flakes, brown sugar, ketchup, chicken broth, apple juice, apple cider and tamari. Whisk to combine and set aside.

In a medium bowl toss chicken with a generous pinch of kosher salt, white pepper and 2 tablespoons of cornstarch.

Heat a teaspoon of oil large pan over medium-high heat. Once hot, work in batches cooking the chicken until golden browned on all sides. Transfer cooked chicken to a bowl and repeat, adding a teaspoon more oil as needed.

Once all the chicken has been cooked, add it all back to the pan and pour the sauce into the pan. Bring to a boil, combine the cornstarch and water to make a slurry and pour while whisking into the sauce.

Stir and cook for a few minutes until the sauce is thick and glossy.

Serve over hot rice, with roasted broccoli and garnish with sliced green onions.

I reviewed this quite a while ago, but just had to say I made it again last week and it still holds in my top 3 chicken dinners! (:

This was really good. I made it tonight and my husband loved it (though he was sad about the minus the bourbon part..). I added cornstarch to make the sauce thicker and we also added some toasted sesame seeds. Will definitely make this again! :)

I made this last night and it was love at first bite! The sauce did take quite a bit longer to thicken than I thought it would, but I also used frozen broccoli, so I probably messed up the liquid proportions. In hindsight, if you’re using a frozen vegetable, I would let the sauce thicken for awhile first then add the vegetable so that it doesn’t end up overcooked by the time the sauce is thick. Overall, great flavor, super easy, and the hubby loved it. Leftovers were great too.
