Description

This is a great summer time pizza when fruit is in season. You can make it with peaches or apricots or do a fruit medley.

The BBQ pizza crust is so great, it tastes like a wood fired pizza crust!

Ingredients

  • 1  Ball Of Pizza Dough (enough For A Medium To Large Pizza)
  • 1 teaspoon Garlic Salt
  • 1 Tablespoon Corn Meal
  • ¼ cups Coconut Oil, Melted
  • ½ cups Trader Joe's Blue Cheese Peach Dip
  • ½ cups Shredded Sharp Cheddar Cheese
  • 2 whole Plums, Pitted And Sliced Or Diced

Preparation

Let the pizza dough sit at room temperature for thirty minutes. Then stretch it out on a cookie sheet, to your preferred thickness.

Light a gas grill and turn to high.

With a pastry brush, brush one side of the crust with oil. Rub garlic salt and cornmeal on the dough. Turn the grill to low once it’s preheated.

Put the oiled side of the dough down on the grill and close the lid.
Wait one minute, maybe two, just until the dough starts to brown. Put oil on the other side of the dough and flip it over. Shut the grill again, and cook two more minutes until just cooked on the other side.
Return the crust to the baking sheet.

Preheat oven to 375 F.

Put the blue cheese dip, the cheddar and the plums on the top of the pizza and bake 15 minutes until the cheese is melted.
