Tender chunks of pork seasoned with blackening seasoning.
Note: You will also need 6 metal or wooden (soaked) skewers. Cut pork into 2-inch cubes and place in a mixing bowl.
For the seasoning mixture, in a small mixing bowl, add oil and all of the spices. Mix into a paste.
Pour the spice mixture over the pork and rub it into each piece. Marinate for 10 minutes or so. While pork is marinating, cut onion into 2-inch pieces. Preheat grill to medium to medium-high heat.
Skewer each piece of pork alternating with pieces of onions. Grill on all sides, turning frequently, about 10 minutes per side. (For more flavor, brush with your favorite barbecue sauce.)
