Description

This dish is unbelievably quick (10 minutes or less!), made with only 3 main ingredients, mad simple and insanely yummy.

Ingredients

  • 200 grams Egg Noodles
  • 3 cloves Garlic
  • 2 stalks Spring Onions
  • 2 Tablespoons Vegetable Oil
  • 3 Tablespoons Soy Sauce
  • 1 Tablespoon Dark Soy Sauce
  • 2 teaspoons Sesame Oil
  • Sliced Red Chilies, To Taste (optional)

Preparation

First, set a large pot of water to boil and add noodles to cook. While noodles are cooking, finely chop garlic and roughly chop spring onions; set aside. Taste noodles at this point to ensure that they do not overcook while you are preparing the fried garlic.

To make the fried garlic, heat a small skillet with vegetable oil. When oil is hot, add chopped garlic and spread it out in the oil to cook evenly. Turn heat to low and fry garlic until light brown in colour. Turn the heat off and transfer fried garlic onto a small platter. Because the oil is really hot, the garlic will continue cooking even when removed from the skillet, and by the time the oil has cooled down, you should have a platter of beautifully caramelized fried garlic.

Check noodles again, and when cooked perfectly al dente, pour into a strainer and run cold water over it. Set noodles aside and start mixing the sauce: soy sauce (for taste), dark soy sauce (for colour), sesame oil (for fragrance) and the fried garlic and oil. Toss noodles in the sauce and top with chopped spring onions and sliced red chiles if you like some heat to go with the noodles. Enjoy!
