Description

This is a simple and delicious black beans and rice recipe! It’s a quick weeknight meal and can easily be served meatless and still be protein-packed! With the meat and a side salad, this is often a complete meal for us.

Ingredients

  • 1  Link Andouille Sausage
  • 1 whole (about 7 Oz. Size) Smoked Beef Sausage
  • 1 Tablespoon Olive Oil Or Canola Oil
  • 1  Small White Onion, Finely Diced
  • 3 cloves Garlic, Minced
  • 1 can (15 Oz. Size) Black Beans, Undrained (We Typically Use Unseasoned Black Beans)
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Salsa, Your Preference (We Use Homemade)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 dash Hot Sauce
  • 1 cup Cooked White Rice (We Often Use Brown Rice)

Preparation

In a large skillet, sauté the sausages with olive oil over medium heat for about 5-10 minutes (until desired crispness). Next add in diced onion and garlic, sauté for 3-5 minutes until fragrant and tender. Next add in beans and liquid, Worcestershire sauce, salsa, smoked paprika, cumin, and hot sauce, if using. Let this simmer for 5 minutes, then stir in rice. Let this simmer all together for an additional 5 minutes and serve!

We often top ours off with a little shredded cheese.
