Description

A twist on your traditional spaghetti, vegetarian-friendly, and low-fat!

Ingredients

  • 1 can (14.5 Oz.) Petite Diced Tomatoes
  • 1 can 14. 5oz Black Beans
  • 1 can 4.5oz Diced Green Chilies
  • 1 leaf Bay Leaf
  • 2 teaspoons Garlic Salt
  • 1 teaspoon Dried Oregano
  • 1 dash Ground Black Pepper
  • 1 pound Thin Spaghetti
  • 2 Tablespoons Shredded Parmesan Cheese

Preparation

In a saucepan over medium heat, stir tomatoes, beans, green chilies, bay leaf, garlic salt, oregano and black pepper. Cook until thickened, approximately 45 minutes.

Cook spaghetti according to directions on box and drain.

Remove the bay leaf from the sauce and either mix the pasta with the sauce or serve the sauce over spaghetti.

Garnish with parmesan cheese and serve with toasty bread.

I found this recipe when there was literally nothing in our pantry but black beans and diced tomatoes! It is sooo good!!! It sounds kind of like an odd combo, but it is quick and super simple to fix on nights that I don’t know what else to fix!
