Description

Healthy vegetarian black bean burgers that don’t fall apart and can be made vegan!

Ingredients

  • 2 cans (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 Tablespoon Vegetable Or Canola Oil
  • 1 teaspoon Cumin
  • 2 Tablespoons Finely Chopped Green Onions
  • ¼ teaspoons Garlic Powder
  • 1-½ teaspoon Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Cayenne Pepper
  • ½ cups Fresh Cilantro, Chopped
  • 2 whole Eggs
  • 1-½ cup Breadcrumbs (as Needed, You May Not Use All Of Them)
  • Oil For Cooking

Preparation

1. In a large bowl, mash rinsed and drained black beans with a fork.(You can also use a food processor or whatever works for you!)
2. Into the bowl with the beans add the oil, cumin, chopped green onions, garlic powder, salt, black pepper, cayenne pepper, cilantro, and eggs (or if you prefer you can use a flax seed/water mixture for vegan burgers). Mix together until it is creamy with a few small chunks.
3. Stir in the breadcrumbs just until the mixture is sticky. The mixture should stick to the spoon. Add more breadcrumbs as necessary.
4. Wet your (clean) hands and form the mixture into patties. You should be able to get about 8 patties out of the mixture. To freeze, wrap each patty individually in parchment paper. Seal them in a large freezer bag and place in the freezer.
5. To cook, preheat a cast iron skillet to medium-high. Add 1 to 2 tablespoons of oil to the pan. If the burgers are fresh, cook for 3-4 minutes per side. If using frozen patties, cook for 6-8 minutes per side. Add toppings as desired and enjoy!
