Beer adds a ton of subtle flavors, emphasized by simple salt and pepper. Heaven!
Lay the chicken thighs in a large baking dish and cover with beer. Sprinkle with salt and pepper and then drizzle with olive oil. Marinate in the refrigerator for 6-8 hours, turning once halfway through.
To cook, heat a grill to about 400ºF and rub the grate down with a bit of oil. Lay the chicken skin-side-down on the hot grill. Cook the chicken for around 30 minutes, turning every 7-10 minutes until the juices run clear.
Serve with a side salad, grilled corn, or a big hunk of watermelon!
