Description

Tender chunks of beef tossed in a deliciously tangy sweet sauce and served over a bed of fluffy jasmine rice. Make this tonight.

Ingredients

  • 1-¼ pound Beef Tenderloin, Diced
  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic, Minced
  • 3 Tablespoons Red Wine Vinegar
  • 1 cup Apricot Preserves
  • 1 cup Kalamata Olives, Chopped
  • 1 bag Baby Spinach, 6 Oz.
  • 1 dash Salt And Pepper, to taste
  • 1 cup Jasmine Rice Cooked

Preparation

Brown the beef in the olive oil over medium high heat. When it’s medium rare, remove from pan, set on a plate and sprinkle with salt and pepper. Set aside.

Add the minced garlic to the same pan you cooked the beef in. Cook for about three minutes and then add the vinegar to deglaze the pan, stirring well to scrape up any brown bits.

Add the apricot preserves and cook for four minutes, until the sauce bubbles and thickens.

Add the olives, beef and spinach and heat through, cooking for a few minutes so that the spinach wilts and the beef finishes cooking.

Serve over jasmine rice.

I would never have thought to try apricot preserves with beef – have a chicken recipe that uses them – but this looks really good. The combination of the sweet and salty is right up my alley!

I made this tonight for dinner and boy was it delicious! Used a lot less olives as the family are not big fans, and mashed potatoes instead of rice, but otherwise exactly the same. So good. Thank you for sharing

This was incredibly yummy – I had beef stew meat in my freezer and couldn’t find tenderloin in my grocery store. Tenderloin would have been WAY better but the sauce definitely made up for it.

This is delicious!!!! I try to keep things lowish carb so I skipped the rice and used a reduced sugar apricot preserve. Thanks for posting. Yum!
