Description

Easy and comforting. The sour cream gives this dish a nice tang!

Ingredients

  • 4 cups Uncooked Wide Egg Noodles
  • 1 cup Sour Cream
  • ½ cups Grated Parmesan Cheese
  • 1 pound Gound Beef
  • 1  Green Bell Pepper, Stem And Seeds Removed Then Diced
  • 1  Vidalia Onion, Diced
  • 1 Tablespoon Tomato Paste
  • 15 ounces, weight Can Petite Diced Tomatoes
  • 1 teaspoon Italian Seasoning
  • 1 cup Shredded Cheddar Cheese
  • Salt And Pepper

Preparation

Preheat the oven to 375 F. Grease a 2-quart baking dish.

Bring a large pot of salted water to a boil. Add the noodles and cook to al dente according to the package directions. Drain and put noodles in the prepared baking dish. Toss with the sour cream and Parmesan.

Meanwhile, heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally. Cook until no longer pink, about 4 minutes. Add the bell peppers and onion and cook until veggies are crisp-tender, about 3 minutes. Add tomato paste, diced tomatoes and Italian seasoning. Season with salt and pepper.

Pour the beef mixture over the noodles and sprinkle with the grated cheddar. Bake 20 minutes.
