Description

Garden fresh zucchini and lots of cheese. What’s not to love?

Ingredients

  • 3 cups Your Favorite Marinara Or Tomato Sauce
  • 2 whole Medium Zucchini, Washed Well, Unpeeled
  • 2 cups Mozzarella Shredded Cheese
  • 1 Tablespoon Ground Oregano
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • Fresh Chopped Basil, Garnish
  • Fresh Parmesan Shavings, Garnish

Preparation

Preheat oven to 400ºF. You will also need 6-inch wooden skewers, soaked in water for at least 30 minutes.

In a small baking dish, add half the marinara or tomato sauce. Set aside.

Dry zucchini well, cut off ends, and slice into thick rounds (we will stack them 3 high). Place rounds in a large mixing bowl and toss with oregano, salt and black pepper.

Place one zucchini round on a clean work surface and top with mozzarella cheese. Add another zucchini round on top, followed by more mozzarella cheese. Finally, place a third zucchini round on top and secure with a skewer through the middle. Repeat with remaining ingredients (I had 4 stacks total).

Place all stacks in the baking dish with sauce. Add remaining sauce. Cover loosely with aluminum foil and bake for 30 minutes, undisturbed. Remove from oven, remove skewers, plate and serve. Garnish with fresh basil and Parmesan shavings.

We love these with a side of sliced crusty bread and small green salad or pasta. Hope you enjoy!
