Description

An easy, family-friendly weeknight dinner!

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 pound Ground Turkey
  • 4 ounces, weight Canned Chopped Green Chiles
  • 4 ounces, weight Canned Diced Black Olives
  • ½ cups Red Onion, Diced
  • 2 Tablespoons Taco Seasoning
  • 8 whole Taco Shells
  • ½ cups Pepper Jack Cheese, Shredded

Preparation

Preheat oven to 400ºF.

In a large skillet, heat olive oil over medium high heat. Add turkey and cook until browned and done, about 7-10 minutes. Add green chiles, black olives, red onion, and taco seasoning. Stir and cook for another 3-4 minutes.

Line up taco shells standing up in an 8×8 dish (if all your shells don’t fit, use a 9×13 dish instead). Divide turkey mixture among taco shells. Sprinkle pepper jack on top of each taco and bake for 10 minutes. To serve, sprinkle with chopped green onions and whatever else you like!

Absolutely delicious! My husband and I LOVE tacos but we have been getting bored with our usual recipe. This one is different and REALLY good. The green chilies added more flavor than I thought they would. We normally put cheddar cheese on our tacos but I think I’ll be using pepper jack from now on. I also like the idea of baking the tacos, it melts the cheese and heats them back up! Thanks for a great new recipe for us. We’ll definitely be making these again!
