We have a new family favorite! We made these yesterday afternoon and all 20 were gone by 7 PM. They were this good—and they were baked, not fried. And we used whole wheat tortillas. What! I know. Crazy.
1. Preheat your oven to 400ºF and, using a paper towel, rub vegetable oil all over a large baking sheet (or use nonstick spray).
2. In a large skillet over medium heat, add 2 tablespoons vegetable oil and garlic (run through a garlic press). Let simmer for 1 minute then add chopped onion. Cook 2 minutes then add ground chicken, onion powder, salt, pepper, and cumin. Cook approximately 12-15 minutes until well cooked and browned.
3. Add chicken mixture to each wheat tortilla and sprinkle with cheddar cheese. Roll up and place on your baking sheet. Continue rolling all taquitos. It’s okay if they all touch on the baking sheet. Using a paper towel, wipe a little more oil on the tops of the taquitos.
4. Bake at 400ºF for 15 minutes until crispy and golden brown on the tops. Sprinkle with queso fresco and serve hot with homemade guacamole!
