Description

Easy, flavorful chicken and pasta main course. It’ll please the pickiest palate. Give it a try!

Ingredients

  • 1 box (8 Oz. Size) Linguine Pasta
  • 2 Tablespoons Butter
  • 1 Tablespoon Canola Oil
  • 2 whole (12 Oz. Size) Split Chicken Breasts, Boneless, Skinless
  • 1 whole Lemon, Zest And Juice
  • 2 Tablespoons Capers And Juice
  • ½ teaspoons Black Pepper
  • 1 cup Low Sodium Chicken Stock
  • 2 Tablespoons Fresh Parsley, Chopped (garnish)

Preparation

Preheat oven to 350ºF.

In a pot of boiling water, add linguine and cook according to package instructions. Drain in colander and set aside in a bowl.

In a skillet or frying pan, add butter and oil. Once melted, add split chicken breasts and cook on medium high heat for 5 minutes each side. Reduce heat to low and add lemon zest and juice, capers, black pepper, chicken stock and stir gently. Allow to cook 5 additional minutes to incorporate all ingredients. Add cooked linguine and mix together.

Transfer ingredients into a baking dish (8×8) and place in the oven covered with foil. Bake 35 minutes. Remove from oven and serve on individual plates. Garnish with fresh parsley.
