Description

This is honestly the best way to eat brown and wild rice—it’s creamy, moist, and unbelievably delicious!

Ingredients

  • FOR THE AVOCADO RICE:
  • 1  Avocado, Medium
  • 1 Tablespoon Apple Cider Vinegar
  • ½ teaspoons Paprika
  • Salt And Pepper, to taste
  • 1 cup Brown And Wild Rice, Cooked
  • FOR THE SALAD:
  • 2 cups Fresh Rocket
  • ¼  Roast Chicken, Shredded
  • ½  Green Pepper, Finely Diced
  • 2  Nectarines, Sliced
  • ¼ cups Chopped Chives
  • ½ cups Feta Cheese (optional)

Preparation

For the avocado rice:
In a medium bowl, mash avocado with apple cider vinegar, paprika and salt and pepper. Fold into the cooked rice until well combined.

For the salad:
Pile the avocado-rice onto a salad platter or bowl. Layer on the rocket, chicken, green pepper, nectarines and chives. Top with crumbled feta cheese (optional) and serve.
