There’s something about the combination of apples, chicken, and corn that is so delightfully different and refreshing!
Combine all ingredients except tortillas in a large bowl. For each quesadilla, place approximately 3/4 cup of the filling inside a tortilla; fold in half and secure with a toothpick. Place on a greased baking sheet.
Bake at 400ºF for 8-10 minutes, or until golden brown. Turn over and bake 5-8 minutes longer. Makes 8.
Nutrition: 288 calories, 11g fat, 4g saturated fat, 0g trans fat, 24mg cholesterol, 398mg sodium, 36g carbs, 2g fiber, 7g sugars, 12g protein, 7% vit. A, 11% vit. C, 19% calcium, 7% iron.
