Description

A quick and delcious fall meal that will leave you full and content.

Ingredients

  • 4 whole Thick Cut Pork Chops
  • 1 Tablespoon Butter
  • 2 whole Medium Sized Apples
  • 1 Tablespoon Packed Brown Sugar
  • 4 Tablespoons Gorgonzola Crumbles
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Salt
  • 2 teaspoons Black Pepper

Preparation

Butterfly (cut a deep slice into) each pork chop. You’ll need that pocket when it comes time to stuff each chop. Then season them with the salt and pepper on both sides.

Melt butter in a medium size pan over medium heat.

While the butter is melting, dice the apples into small, bite sized chunks. Add apples and brown sugar to the butter and sautee for several minutes. Stir frequently, you don’t the apples to get mushy! When you feel the apples are done, transfer them to a bowl and add the gorgonzola.

Stuff each pork chop with a nice spoonful of the apple and gorgonzola mixture.

Add the olive oil to the pan and heat over medium high. When the pan is back up to temperature, add the pork chops and cook thoroughly, roughly 4 minutes per side.

I like to serve these with mashed potatoes and green beans.
