Description

This quick and easy aloo gobi is super healthy and great to make when you haven’t got all night to be cooking! There’s nothing better than Indian food without all of the calories!

Ingredients

  • 50 milliliters Canola Oil
  • ½ Tablespoons Ground Coriander
  • 1 Tablespoon Turmeric
  • 2 cloves Garlic, Finely Chopped
  • ½ whole Green Chili, Finely Chopped
  • 1 whole Large White Potatoes, Peeled And Cut Into Cubes
  • 1 whole Cauliflower, Cut Into Florets
  • 10 grams Cilantro
  • ½ cups Water
  • 1 can (15 Oz. Size) Chickpeas
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Preparation

Place a deep saute pan on a medium-high heat and pour in canola oil. Add ground coriander, turmeric, garlic and green chilli, and fry for around 40–50 seconds. This is going to form the spice paste which will be used to flavour dish.

Next, add potato, cauliflower and cilantro and mix together well, so the cauliflower and potatoes take on the nice yellow colour of the spice paste.

Add water and chickpeas, give it all a good stir. Bring water to the boil, turn the heat down, cover the pan and simmer for 15 minutes.

Season to taste. Serve up in a large bowl with a small sprinkling of chopped cilantro.
