Description

I have a new boyfriend. His name is “canned salmon.”

He’s so hot.

Ingredients

  • 1 cup Black Quinoa
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 cup Red Onion, Diced
  • 1 whole Fresh Cayenne Pepper, Minced
  • 1 can (about 14.75 Oz. Size) Alaskan Pink Salmon, Drained
  • 4 cups Baby Spinach
  • ½ teaspoons Coarse Salt
  • ½ teaspoons Freshly Ground Pepper
  • ¼ cups Fresh Lemon Juice

Preparation

Cook the quinoa in boiling water until they burst and become little spirals, about 15 minutes. Drain if needed and return to the pot.

Heat the oil in a medium skillet over medium-high. Add the onion and cayenne chili, and saute until softened and starting to brown, 6 minutes.

Add onion mixture to the pot with the quinoa, along with the salmon and spinach. Toss to combine. Give a good pinch of salt and pepper to the mix. Spritz with lemon and get all healthy!

I’m sure it tastes nice and all, but why is it filed under “vegetarian?” Last I checked, fish were still animals.

i thought this was great, my husband hated it, but i think its because he’s never liked salmon. i used ground cayenne because i didn’t have fresh, and it turned out great (to me.) i also cooked my quinoa in vegetable broth, which i think gave it more flavor. thanks for the great healthy recipe!

made this the other night and was very impressed! two tips – use GOOD canned (or pouch-ed) salmon, and taste it before you salt, because sometimes canned salmon is already salty. i didn’t follow the ingredient amounts exactly and added a TON more spinach, it made a very quick and easy meal. i imagine it would also be very adaptable, you could add other veggies (red pepper maybe? or zucchini!) or greens (maybe some kale too!)…
