Lime marinated chicken that is grilled to perfection! A light, fresh, and healthy meal for summer!
Combine all of the ingredients except the chicken in a bowl, then add in your chicken breasts. Toss to coat both sides of the chicken, cover with a lid or plastic wrap and allow it to rest in the fridge for 1 hour.
Coat your grill grates with cooking spray and heat to medium heat. Add the chicken to the hot grill and cook chicken breasts for 3-4 minutes on each side, or until chicken is cooked through and no longer pink in the center.
Optional: Garnish with more fresh parsley and serve with lime slices.
