Description

Iced Oatmeal Raisin Cookies will comfort your heart and make your mouth happy!

Ingredients

  • 1-½ cup Raisins
  • ½ cups Rum
  • 2 cups Rolled Oats
  • 2 sticks Unsalted Butter, Softened
  • 1 cup Brown Sugar
  • ½ cups Sugar
  • 2 whole Large Eggs
  • 2 cups Flour
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 2 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • 1 teaspoon Vanilla Extract
  • 2 cups Powdered Sugar
  • 3 Tablespoons Milk

Preparation

Preheat oven to 350 F. Prepare two cookie sheets by spraying each with baking spray and set aside.

In a small cup add the raisins and pour the rum on top. Allow them to soak for 20 minutes so they will get plump. If you don’t have rum then you don’t have to use it.

In a food processor, pulse the rolled oats until they are well blended and turned into fine powder.

In a separate bowl using an electric mixer, cream the butter until fluffy then add both sugars and mix until well blended. Add the eggs and mix them in as well. Add the dry ingredients (flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg) and mix well. Fold in the vanilla and the raisins.

Spoon tablespoon-sized scoops of the cookie batter onto the baking sheets and space about an inch apart. Bake for 10 to 12 minutes then remove pans from the oven and set them on a rack. Allow cookies to completely cool before icing.

In a separate bowl, whisk together the powdered sugar and milk until well mixed. Dip the tops of the cookies into the icing and set on a cooling rack and allow to set.
