Description

I love the delicious combination of the slightly crunchy, savory cornflake crumbs and the sweet coconut and chocolate.

Ingredients

  • 1 cup Butter, Softened To Room Temperature
  • 1 cup Packed Light Brown Sugar
  • 1 cup White Sugar
  • 1 Tablespoon Milk
  • 1-½ teaspoon Vanilla Extract
  • 2 whole Eggs
  • 1 cup Crushed Cornflake Crumbs
  • 2-½ cups Quick Cooking Oats
  • 1-½ cup All-purpose Flour
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Shredded Sweetened Coconut
  • 1 cup Chopped Walnuts (optional)
  • 1-½ cup Chocolate Chips

Preparation

Preheat the oven to 350 degrees F.

Cream together the butter and sugars until light and fluffy. Add the milk, vanilla and eggs and beat well. Stir in cornflake crumbs and oats. Add the flour, baking soda and salt and mix. Stir in the coconut, walnuts, if using, and chocolate chips.

Place tablespoon-sized balls of dough on a lightly greased or parchment paper lined cookie sheet and bake for 10-12 minutes until lightly golden around the edges.

Didn’t add the nuts, and used half chocolate chips, and half mini M & M’s. Turned out great, and the M & M’s added a nice bit of color.

So delicious! These simply disappeared. I had to make them twice — the first time as the recipe states (AMAZING) and the second time with a couple of substitutions. I substituted milk chocolate chips since I was out of semi-sweet, and added an equal amount of whole cornflakes since I was out of walnuts. The saltiness of the extra cornflakes cut the sweetness of the milk chocolate, and these cookies were extra crispy and chewy. Just a fabulous recipe. I want to try them again with raisins — perhaps chocolate-covered raisins. The mind boggles. GREAT recipe — just make them.

Really great recipe. Easy to cut in half if you want a smaller batch. I love the texture and level of sweetness…some cookies are too sweet and these are perfect! Thanks for sharing.
