Description

Soft and chewy chocolate coffee cookies with espresso chips. If you like coffee, you need to try these cookies!

Ingredients

  • 1 stick Butter
  • ½ cups White Sugar
  • ½ cups Brown Sugar
  • 1 teaspoon Baking Powder
  • 1-½ teaspoon Espresso Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • ⅔ cups Unsweetened Cocoa Powder
  • 1-¾ cup All-purpose Flour
  • ¾ cups Espresso Chocolate Chips
  • ¾ cups White Chocolate Chips

Preparation

Preheat oven to 350ºF. Spray cookie sheet with nonstick baking spray.

In a large bowl, cream butter, white sugar, and brown sugar. Stir in baking powder, espresso powder, salt, eggs, and vanilla.

Stir in cocoa powder. Add flour a little at a time until just combined. Do not over-mix. Fold in both kinds of chocolate chips.

Scoop cookie dough on prepared pans. Bake for 8–10 minutes just set. Do not over-bake. Cool on cookie sheet for 2–3 minutes before moving to a wire rack.

I will begin by saying the flavor of these is fabulous. I will also say, they look NOTHING like the picture. I suspect that because there is only 1 stick of butter in the batch and it uses baking powder instead of baking soda, these cookies do not spread at all. I had to pat them down before baking them to not have them be a ball shape. That being said, I would like to experiment to see if I can tweek the recipe to have them spread on their own, but my kids LOVED the coffee/mocha flavor.
