Description

More like an oatmeal “cake,” this breakfast dish is wholesome (yes, I consider large amounts of brown sugar wholesome), moist and very versatile. You can add fruit to the batter before baking or lay it on after, you can douse your portion of baked oatmeal in milk and slurp it up with a spoon, or you can skip the milk and eat it with a fork. Any way you try it, it is sure to please. Personally, my favorite way to eat it is covered in fresh strawberries and milk.

Ingredients

  • 6 cups Oatmeal (quick Or Rolled Oats)
  • 2 cups Brown Sugar
  • 2 cups Milk
  • 1 cup Oil
  • 4 whole Eggs, Lightly Beaten
  • 1 Tablespoon Baking Powder
  • 2 teaspoons Salt

Preparation

Preheat oven to 350 degrees.

Mix all ingredients together and pour into a greased 9X13-inch baking pan. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

Serve warm with milk….or not.

Just made a half batch of this! Very good, I’m not a big oatmeal eater unless it is in cookie form. But I really enjoyed this! Good stict to your ribs winter breakfast!

Delicious! I was making this just for me this morning, so I cut the recipe in half and baked it in an 8×8 – this worked out great (took about 30 minutes to cook, but my oven generally runs long on cooking times).

Starting with the halved recipe, I also made a few changes to cut some calories. I replaced all the oil with applesauce and it baked up fine – didn’t miss the oil at all. I also cut the brown sugar in half (so I used 1/2 cup for the halved recipe) and it was plenty sweet for me. Then just for fun I added a splash of vanilla, some cinnamon, a touch of maple flavoring, and a handful of wheat germ before putting it in the oven. I really enjoyed this warm with a splash of milk.

This is a wonderful way to eat oatmeal – a nice change in texture! Thanks for the recipe!

I’ve got problems. I had to bake it for 35 minutes, and then when I tried to cut it out (it looks pretty solid in the picture), it all crumbled apart – really crumbled, like crumbs. What did I do wrong? It was still super delicious, and of course this didn’t stop me from eating it, but I wasn’t able to give it to my kids before they had to leave for school. I had to hurry and make them some instant oatmeal.

Great recipe! Cut the sugar to 1 1/2 cups, and added dried cranberries. Very, very yummy. I don’t think I’ll be buying boxed cereal as much this winter!

We make this all the time and when I feed it to company they always want the recipe. It’s wholesome and yummy and very simple to make. The hardest part is waiting for it to bake. We love to top it with fresh fruit and a little sprinkle of cinnamon & sugar.

I made this today and loved it. It was incredibly EASY! I used half rolled oats, half quick-cooking. Also, I was low on brown sugar, so I only used about 1 and 1/4 c. and I thought it was plenty sweet.
