Awesome recipe! I discovered I had no parmesan on hand so I used Swiss cheese instead- very good indeed! This will definitely be on the list to make again!

I made this today for an easy Sunday brunch. I loved it, but my husband took only one bite before asking if I wanted to finish his portion (which I gladly did). A crust might have helped, as well as squeezing the zucchini a bit. I also added some mushrooms to the sauteed onions just because I had them on hand. I’ll make this again, but I will have to wait until I have someone else to share it with.

This was good but a little mushy after 40 minutes. Maybe I should have squeezed the zucchini first before adding or cooked it longer? Still tasty…

really good and hearty, my boyfriend who normally hates when i cook a vegetarian meal because he says he doesn’t get full, had no complains. really easy to make too.
I also was out of Bisquick at the moment so used pancake mix instead and it was still delisous

My mom’s friend’s mom makes this… so yummy and a great way to get the kids to eat veggies!

Hi candykettle! We use the bisquick for pancakes and waffles! There is an entire category of recipes out there called “impossible pie” recipes. Basically, you put a bunch of stuff in a pie plate (meat, veggies – think quiche ingredients without the eggs). Then mix up a thin Bisquick batter and pour over . As it bakes it forms it’s own crust. Maybe google “impossible pies?” I have one recipe I use for Thanksgiving leftovers. I may have to post that one for you.

This is a great recipe karenpie! I made it for my family for supper last night. It would be great for brunch also. What else can the Homemade Bisquick be used for ?

In rating this recipe I accidentally hit “2 mitts” instead of “5 mitts”. Sorry! My family LOVED this recipe! It has a wonderful flavor and it easy to make. And my husband, who does NOT like zucchini, went back for seconds. We will making this again and again!
