Description

The crunch of the broccoli, the salty bacon, and the sweet dressing are a great combination. This is a very tasty salad.

Ingredients

  • 2 bunches Broccoli
  • 1 pound Bacon
  • 1 cup Cranberries Or Golden Raisins
  • 1 cup Pine Nuts
  • ½ cups Diced Red Onion
  • 1 cup Mayonnaise (I Use Light Mayonnaise)
  • ¼ cups Sugar
  • 2 Tablespoons Red Wine Vinegar

Preparation

1. Chop broccoli florets into bite-sized pieces and place into a large bowl. Fry the bacon until crisp and then break into bite-sized pieces; add to the broccoli.

2. Add the cranberries, pine nuts, and diced red onions to the broccoli and bacon.

3. Using a whisk, combine the mayonnaise, sugar, and the red wine vinegar until well blended.

4. Pour the dressing over the salad and toss.

5. Chill 3 to 4 hours and serve.

I tried 3 new dishes for Super Bowl yesterday – this was far and away my favorite. I made a half recipe since there were just the two of us and a tad less sugar – I could have eaten all of it myself. Thanks!
