Simple, raw, delicious zucchini salad, perfect on a hot day.
With a zester, stripe the zucchini, leaving partial peeling there, but making it look pretty and giving it texture.
Cut zucchini length wise, then in angled julienne half circles.
French cut the onion. This is just an angled cut to the onion. Walla Walla onions are huge, so a fourth of the onion is all that is needed for this size. But if you are using another type of SWEET onion, you only need about 1/2 a cup of onion.
Break apart onion pieces, place in a bowl with the zucchini, toss together with some Italian dressing, to your taste.
Let marinate about 10-15 min. before eating. Yummy!
My kids love to eat their zucchini this way! Mix it up by adding some yellow crook-neck squash to the mix too.
