Saute onions, garlic, and ginger till soft. Set aside to cool.
Mix pork, sesame oil, soy sauce, salt/pepper, and cooled veggies together in a bowl. Mix until everything is evenly distributed.
Form each dumpling by placing a spoonful of the meat mixture into the center of one wonton wrapper. Dab your fingertip in water and trace the edges of the wrapper to help it stick. Pull up the corners and seal the edges (see related link for more details).
After assembling all of your dumplings (around 30 total), heat a small amount of vegetable oil in a pan. Place your dumplings in the oil and sear the bottoms golden brown. Then pour in about 1/4 cup of water and lid the pan immediately. Let the dumplings steam for about 1-2 minutes.
Serve with soy/vinegar dipping sauce (see link). Enjoy!

These are great! So yummy! I make them like this also but sometimes I add in a little shredded carrot if I have it on hand.
