I had a bag of shredded cabbage and half a jicama in the fridge and needed to use them up. Dinner that night was tequila lime chicken, so I thought I’d keep with the Southwest theme. My husband really, really liked it and ate every last speck.
Dump the coleslaw mix into a bowl and add the shredded jicama. In a small bowl, mix the mayo, Mrs. Dash, and the lime juice. Add the mayo mixture to the coleslaw and stir well. Chill until ready to serve.
Note: Jicama is a round brown vegetable that tastes like a cross between a potato and an apple. It’s usually found in the specialty produce section of most grocery stores. It should be peeled before using. I either cut it into matchsticks or shred it using a box-style cheese grater.
