Description

This dinner looks fancy, but you can make it in less than 20 minutes—great for a stay at home date night!

Ingredients

  • 1-½ cup Water
  • 3 Tablespoons Olive Oil
  • 2 teaspoons Italian Seasoning
  • 1-½ cup Couscous
  • 8 ounces, weight Feta Cheese
  • 12 spears Asparagus
  • 2 pieces Salmon Fillets
  • 1 teaspoon Salt, Divided
  • 1 teaspoon Pepper, Divided

Preparation

1. Boil the water with 1 tablespoon of olive oil and the Italian seasoning in a pot. Add the couscous and stir, remove from heat and cover. After you cook the salmon and asparagus, add the feta cheese to the couscous and fluff everything with a fork.

2. Prepare a grill pan over medium to medium-high heat. Trim the asparagus spears and put into a plastic storage bag with 1 tablespoon olive oil and 1/4 teaspoon salt and 1/4 teaspoon pepper. Seal and shake/mix around, then grill for about 5 minutes, turning occasionally.

3. Prepare the salmon fillets by coating with remaining 1 tablespoon olive oil then sprinkling with the remaining 3/4 teaspoon salt and 3/4 teaspoon pepper. Grill on the same pan with the asparagus, 2-3 minutes per side (tip for grilling fish: you know it’s done when it pulls away easily from the pan).

4. Plate everything and serve!

I made this last night and had to hold myself back from eating all 5 servings I got from it. I used more salmon than the recipe called for because I wanted leftovers for lunch. I also used broccoli instead of asparagus because my husband doesn’t like asparagus (I know–HOW is that possible?). But this was simple, healthy, and super delicious. My husband completely cleaned his plate and that rarely happens! The only change for the next time is that I will make slightly less couscous (1 cup vs. 1-1/2 cups) because we just had too much.
