A sweet and tangy salad with a hint of heat.
1. Toss the cucumbers with salt in a colander. Place colander in the sink to drain for about 30 minutes, then rinse in cold water. Drain and pat dry with paper towels.
2. Mix sugar and vinegar in a mixing bowl until the sugar has dissolved. Add cucumbers, jalapeno peppers, cilantro, and ginger. Toss to combine. For best results, refrigerate for at least one hour prior to serving to allow the full flavor of the salad to develop.
