Description

I got this recipe from a friend and I have no idea where she got the name. But it’s a great hearty meal that makes alot!

Ingredients

  • 4 slices Bacon
  • 1 pound Lean Ground Beef
  • 3 Tablespoons Chopped Onion
  • 3 Tablespoons Oil
  • 2-½ cups Frozen Hash Brown Potatoes (shredded Kind), Thawed
  • 1 can 11 Oz. Mexicorn Whole Kernel Corn, Red And Green Peppers, Drained
  • 1 can 4.5 Oz. Chopped Green Chiles, Drained
  • ½ cups Barbeque Sauce
  • 2 cups Shredded Cheddar Cheese
  • 1 can Refrigerated Biscuits (8 Ounce Can)

Preparation

Heat oven to 400 degrees F. Cook bacon until crisp; drain on paper towel. Crumble and set aside.

In a 12-inch cast iron or oven proof skillet, cook ground beef and onion over medium heat until beef is thoroughly cooked, stirring frequently. Drain and place beef mixture in bowl and cover to keep warm.

Add oil to same skillet. Heat over medium high heat until hot. Add potatoes; cook 3 to 5 minutes or until golden brown, stirring frequently. Add cooked ground beef mixture, corn, chiles, barbecue sauce, cheese, salt, and pepper; mix well. Cook until thoroughly heated, stirring occastionally.

Sprinkle with bacon. Separate dough into 8 biscuits. Arrange biscuits over hot mixture.

Bake at 400 degrees for 16 or 24 minutes or until biscuits are deep golden brown and bottoms are no longer doughy.

We loved this! I can see many possibilities for switching out veggies, different meats and sauces, but I’m not saying that it would improve it, it doesn’t need improving! This was a fast and easy dinner, nice for a busy night.

I made this last night. The guys loved it! It was easy to make, the directions are well-written. Very tasty-could also be made using cornbread for the topping.

Great recipe and as mentioned above, VERY flexible. I’m not a big fan of green chiles, so I dumped in a cup of french-style green beans instead. YUM! What a super dish. The BBQ sauce gives it a tangy taste, but is not too sweet – which my hubby really liked. We also really like the crunch (and taste) of the bacon. This is a keeper for sure. Thx for sharing!!

Yum, yum, triple yum! I loved this recipe! I didn’t put the chiles in because I’m not a big fan, but everything else was perfection. I was nervous the biscuits were going to burn, but I rotated my pan and put it on a lower shelf about 3/4 through and that seemed to do the trick. I can’t wait for leftovers tomorrow night!

I made mine with ground turkey and turkey bacon and it still turned out fantastic.

So yummy! I realized I did not have BBQ sauce when I was making this recipe so I add a can of baked beans & some ketchup and it turned out great! Such a flexible recipe!
