This is a very typical accompaniment for most Chilean dishes. It’s great with everything from steak, chicken, fish, and roasted veggies to my favorite, a bowl of plain white rice. Plus it’s budget friendly as you might have most of these ingredients on hand. It may seem like a simple dish but the trick is in the preparation of the onions.
First slice the onion and sprinkle with lots of salt. Don’t be shy. Then put the rings in a colander and squeeze the rings several times under running lukewarm water. Keep them under the lukewarm water until you see the onions almost wilt like they were cooked.
In a small bowl, add the onions and pour the olive oil. Then combine the tomatoes, red wine vinegar, lemon juice, cilantro and season with salt and pepper to taste. Let it stand for 5 minutes to marinate flavors and serve.
