A layered salad full of good stuff like spinach, quinoa, black beans, cilantro and lemon … so good for you it will make you and your body happy!
Bring 2 cups of water to a boil. Add 1 cup of uncooked quinoa to the water and stir. Bring back up to boil and then simmer until quinoa “pops” out of its skin. It should absorb all of the water as well. Set aside.
In a small saucepan, heat the black beans (undrained, unrinsed). Set aside.
To assemble the salad, place spinach leaves on a plate. Top with quinoa, then black beans, chopped tomatoes and cucumbers. Sprinkle with fresh cilantro leaves and a touch of salt and pepper. Squeeze lemon juice over the salad, along with a light drizzle of olive oil if you like.
