This is a favorite in our household. Kalamata olives, sundried tomatoes, and artichokes give this its bold flavor! Topped with pine nuts, we usually put a little more than the recipe calls for. Mmm-mmm!
Cook pasta according to package directions, omitting salt and fat. Drain, rinse with cold water.
Combine pasta, spinach and the next 5 ingredients in a large bowl.
Drain artichoke hearts into the pasta mixture. Coarsely chop artichokes and add to pasta along with 1/2 cup feta and lightly toss.
Sprinkle each serving with remaining feta cheese.

Wonderful recipe! My husband and I both enjoyed the freshness of the dish. All the ingredients work well with one another. We will definitely make again.
