Description

Lemony pasta with sauteed shrimp and fresh basil.

Ingredients

  • ¾ pounds Angel Hair Pasta
  • ¼ cups Olive Oil, Plus Extra
  • 1 whole Onion, Large; Chopped
  • 3 cloves Garlic, Minced
  • 1 pound Shrimp, Raw, Shells And Tails Off
  • 1 whole Lemon, Zest And Juiced
  • 1 cup Fresh Basil Leaves
  • ½ cups Parmesan Cheese (Optional)
  • 1 pinch Salt
  • 1 pinch Black Pepper

Preparation

Step 1: Begin by bringing a large pot of water to boil, add the angel hair pasta and cook according to the package directions.

Step 2: Meanwhile, in a large frying pan over medium heat, add 2 tablespoons of olive oil. Once heated, add the white or yellow chopped onion, season with a pinch of salt and pepper. Saute for 3-4 minutes.

Step 3: Add the minced garlic and the raw shrimp. Don’t cook the shrimp for long, since they get chewy when overcooked. Cook them for about 30 seconds-1 minute per side.

Step 4: Add the angel hair pasta to the pan, along with the rest of the olive oil, lemon juice and zest. Mix altogether. If the pasta is somewhat dry, add more olive oil.

Step 5: Take your fresh basil leaves, roll them up and cut them into slivers (chiffonade). Toss the basil in.

Step 6: Divide the pasta into bowls, garnish with more basil, and if you want, freshly grated Parmesan cheese.

I love this recipe, I printed it months ago and it hung on my fridge because I made it so often. I just reprinted it because the recipe is gone…probably under the fridge…guess I should clean out under there.
