A different spin on cole slaw …. the apples lend a surprise pop of flavor, the jalapeno gives a little heat, and the lime gives a fresh citrus taste sensation.
In a medium bowl, whisk together mayonnaise, vinegar, lime zest, lime juice, sugar, salt and pepper.
In a separate bowl, combine cabbage, apple and jalapeno.
Pour the dressing over the cabbage mixture; toss to coat.
Cover and refrigerate for at least 1 hour.
Toss in the chopped cilantro just before serving. Makes 6 servings.
