Description

This simple slow cooker stew is perfect for a chilly day. Try something wild and crazy and substitute sweet potatoes or parsnips for the white potatoes and carrots!

Ingredients

  • FOR THE PORK:
  • 1-½ pound Boneless Pork, Cut In Cubes
  • 2 teaspoons Canola Oil
  • 1 cup Flour
  • 1 dash Salt
  • 1 dash Pepper
  • 1 dash Onion Salt
  • 1 dash Garlic Salt
  • _____
  • FOR THE STEW:
  • 2 pounds Potatoes, Cut In Chunks
  • 4 whole Medium Carrots, Cut In Chunks
  • 32 ounces, fluid Chicken Broth
  • 1 whole Dried Bay Leaf
  • 2 teaspoons Onion Powder
  • 1-½ teaspoon Seasoned Salt
  • ¼ cups Cornstarch
  • ½ cups Water
  • 1 teaspoon Salt And Pepper, Or To Taste

Preparation

1. Put potatoes and carrots in the slow cooker.

2. Heat 1 tsp. oil in a frying pan over medium-high heat. Dredge half of the pork with flour and add to pan, seasoning with salt, pepper, onion salt, and garlic salt. Cook until pork starts to brown a bit.

3. Add the pork to the slow cooker. Repeat with the remaining oil and pork.

4. Add some of the broth to the pan—just enough to loosen up the bits on the bottom—and pour into the slow cooker. Add the remaining broth, bay leaf, onion powder, and seasoned salt.

5. Cook on low for 6-8 hours, or until pork is cooked and vegetables are tender.

6. Combine cornstarch and water, and stir into the stew. If the stew thickens immediately, season to taste and serve anytime. Otherwise, turn heat to high and cook stew for an additional 30 minutes.

I made this last night…amazing. The seasonings are *perfect* and I wouldn’t mess with a thing other than I had not broth but stock and my garlic salt had parsley in it already so I ended up with some additional color and flavor. The meat was so tender that it just melted in your mouth. It was delicious and perfect on a very cold NY night. Going in my keeper file for sure! Thanks so much!

I was running short on time, so I cooked this up in a pressure cooker. It turned out great.

Hey! THis was fabulous! I would add celery to it, just for the fun of it. It’s green, healthy and who doesn’t need MORE veggies, right? Thanks for this, it’s a keeper.

I made this last night, but used my pressure cooker instead of my crock pot and then served it over whole wheat egg noodles. It was such a winner for my family!! We are all having it for lunch today and my girls let out a happy yell when I told them :) Thank you.
