Delicious saucy chicken curry packed full of flavor and on the table in 30 minutes! Perfect for a weeknight meal.
Combine all the spices in a small bowl (garlic powder, cumin, turmeric, curry powder, garam masala, black pepper, salt, and ginger). Set aside.
Heat oil in a large pan over medium-high heat. Once heated, add onion and cook for about 5 minutes or until softened. Add spices and cook an additional minute, stirring occasionally.
Add chicken and sauté until almost cooked through. Add bell pepper and cook for an additional minute, stirring occasionally.
Stir in coconut milk, tomato sauce and tomato pasta and simmer for 10 minutes. Serve over rice.
