Try cracking your eggs onto a bed of zucchini, then top it with Parmesan and crushed red pepper. You won’t regret it.
In a skillet, heat oil over medium heat. Add shredded zuchini, sprinkle with salt and pepper, and cook for about 3 minutes.
Make a well for the egg and crack egg into pan. Cover and cook until egg is at desired doneness.
Top with Parmesan, crushed red pepper and more salt and pepper. Enjoy!
