Description

Homemade granola that’s better than store bought in every way! Oats, pistachios, dried apricots, coconut, flax, pecans, dark chocolate all mingling with maple brown sugar and warm ginger spice make for such a delicious flavor all its own.

Ingredients

  • 3 cups Quick Cooking Oats
  • 1 cup Raw Pepitas
  • 1 cup Chopped Pecans
  • 1 cup Chopped Pistachios
  • 1 cup Coconut Pieces
  • ½ cups Ground Flaxseed
  • 1 teaspoon Salt
  • 1-½ Tablespoon Ground Ginger
  • ⅓ cups Brown Sugar
  • ¾ cups Maple Syrup
  • ½ cups Olive Oil
  • 1-¼ cup Chopped Dried Apricots
  • 3-½ ounces, weight Chopped Dark Chocolate

Preparation

Preheat oven to 325ºF.

In a large bowl, add oats, pepitas, nuts, coconut, flax, salt, ground ginger and brown sugar. Mix to combine all ingredients then add maple syrup and olive oil. Mix until all ingredients are moistened.

Press into two parchment-lined baking sheets (one regular sized sheet and a smallish one should do). Bake for 50–55 minutes, until golden brown and crispy. Soon after removing from the oven, add the chopped apricots and mix into warm granola. Once the granola has cooled, add the dark chocolate.
