Allergy-friendly baked chicken kebab skewers (Estepada Chicken). Serve with fries or rice.
Marinate chicken and vegetables with remaining ingredients for 1 hour.
Preheat oven to 350ºF.
Thread chicken on a wooden skewer, then add a cube each of onion, capsicum and tomatoes. Repeat until all the chicken and vegetables are skewered.
Place on a baking tray. Brush remaining marinade onto skewers, if there is any left over.
Bake for 35 minutes or until chicken is done. Serve with fries or your choice of side.
