Tender and juicy smoked duck recipe.
Wash and prep duck by removing excess fat. Pierce duck multiple times in the breast and thigh areas.
Mix cure ingredients and generously rub duck inside and out. Let it cure for 6 days in the refrigerator.
Rinse duck with cool water and pat dry completely. Place duck in smoker with breast facing down.
Initially dry the duck out in the smoker at 140ºF for 1 hour. Smoke the duck at lowest temperature for 3 hours.
After 3 hours, turn up the heat to 150ºF and smoke for another 3 hours. Remove the duck from the smoker. Enjoy!
