This warm sausage salad with fresh baby potatoes, green beans, and eggs makes a great summer lunch. It’s filling but light at the same time!
Blanche the beans for a couple minutes and set aside.
In a skillet, heat some oil and fry sausage slices together with the garlic for 1–2 minutes. Add potatoes, toss, and cook for another 1–2 minutes.
Transfer contents of the skillet to a large bowl. Add blanched beans, red wine vinegar, parsley, and salt. Toss and serve on plates topped with the boiled eggs.
