Description

This fudgy, rich peppermint vegan brownie is baked in a skillet and covered with a healthy chocolate truffle frosting! It’s an easy, gluten- and allergy-free holiday dessert!

Ingredients

  • FOR THE BROWNIE:
  • 1 box (14 1/2 Oz. Size) Enjoy Life Brownie Mix
  • 2 Tablespoons Oil, As Directed On Box (I Used Avocado Oil)
  • ¾ cups Water, As Directed On Box
  • FOR THE FROSTING:
  • 6 Tablespoons Avocado, Mashed (86g)
  • 4 Tablespoons Cocoa Powder
  • ½ teaspoons Pure Peppermint Extract
  • ¼ teaspoons Vanilla Extract
  • Pinch Of Salt
  • ½ cups Enjoy Life Mini Chocolate Chips
  • Crushed Candy Canes, For Garnish (optional, But Recommended)

Preparation

Preheat oven to 350ºF and rub the bottom of an 8-inch cast-iron skillet with oil.

Prepare the Enjoy Life Brownie Mix according to the package directions, using the oil and water. Once mixed, pour brownie into the prepared pan and bake until a toothpick inserted 2 inches from the side of the pan comes out clean, about 30–33 minutes.

While brownie bakes, prepare the frosting. Place the mashed avocado, cocoa powder, peppermint and vanilla extracts and a pinch of salt into a small food processor (mine is 3 cups) and blend until smooth, scraping down the sides as necessary.

Place the chocolate chips into a small, microwave-safe container/bowl and microwave on half-power, using 30-second intervals, stirring between each interval, until smooth and melted. Add the melted chocolate chips into the food processor and blend until smooth and combined.

Once the brownie bakes, spread on the truffle frosting and sprinkle with crushed candy canes. Devour immediately!
